Meet the chef
Chef Domenico De Marco comes from Imola, near Bologna in Italy. He’s had a stellar career in some of Europe best restaurants where his culinary skills have been honed by renowned chefs including Luca Marchini, Piergiorgio Parini and Andrea Accordi. Residing in Australia since 2010, Domenico has worked with chefs Luke Mangan and Neil Perry and in his own highly regarded Melbourne restaurant.
Locale @ The Grande is a partnership venture with hotel owners, Ian and Jodie Hawkins, who share Dom’s love for country life and its simple, authentic and wild pleasures, including beautiful artisan food created from produce found close to home.
Dom’s way is to cook from scratch, render honour to his produce, waste little, and share in the enjoyment his food gives. It’s not unusual to find him table-side, checking in with diners, explaining techniques and loving the whole deal.
His other great passion is cycling and Dom is often seen riding out along the Malmsbury Road, recharging his batteries prior to service. Don’t hit him!
