Our unique destination dining experience Locale @ The Grande, is where Michelin star-experienced chef Domenico De Marco creates slow, beautiful food with much devotion. His cuisine is authentic Italian and created, for the most part, from scratch, including fresh mozzarella, baked ricotta and pastas, freshly baked breads, house-cured meats and freshly churned gelato.
Domenico’s menus celebrate the farmers and food artisans of the Central Highlands region, and the ongoing relationships that ensure you receive the freshest of local seasonal produce. He sources free-ranged animals, raised on wholesome natural foods, and honours them with creative dishes in which very little is wasted, as is the Italian way.
At Locale you’re invited on a culinary adventure through modern Italian cuisine and our rustic and traditional cucina menu which focuses on antipasto, risotto and pastas and slow-cooked meats, or as Dom likes to call it… ‘the food that is in my blood.’
